A few years ago, the most expensive and sought-after hotels and restaurants were in the heart of big cities. The more central the better and more magnificent they were. But things change. Now the more secluded the location, the more desired and valuable the hotel or restaurant in that location.
Maidla Nature Resort is a micro-hotel with three small forest villas. Soo is a restaurant for ten guests located in the resort. It doesn’t get more private than this. The chef personally brings all the dishes to the table and introduces them to everyone. He’s your private chef. With the only difference that it is not you who decides what you want to eat, but he does that for you.
Most of the flavours on the plate are literally foraged from the surrounding swamp, bog and forest. The work of a forager is equally important in Maidla with that of a chef. And then Soo chef Daanius Aas turns everything into a proper swamp gourmet. Fine dining has moved from the heart of the city to the middle of nowhere in the case of restaurant Soo. It is full of vitality and ready to offer tastes that would be quite different if taken to the city centre.
