As simple as it gets

Last summer restaurant Rado established itself in the former premises of the popular restaurant Ribe. Until now the Old Town was dominated by restaurants with fancy interiors serving food made from expensive ingredients. Rado is the opposite of this, valuing simplicity and often serving dishes made from just one ingredient. The newcomer has inspired other Old Town eateries to shake things up as well.

Rado’s simple cuisine is based on the market to plate principle. Except head chef Rado Mitro buys everything that others may not even notice: calf lungs, sheep kidneys, chicken hearts… No need to worry; Rado is not an offal restaurant. Dishes are simply made of everything exciting and seasonal. Breaded zucchini resembles schnitzel, wild goat tartare is covered with thin slices of raw porcini. Rado doesn’t go out of his way to create complex flavour combinations. Instead, he just lets the flavours be.
