Laulasmaa Spa has two restaurants. Wicca is meant for the guest with connoisseur tendencies, conscious of the quality and flavour of the food. Or for those who simply enjoy a stroll in Laulasmaa’s pine forests. As promised in the poetic introduction on the restaurant’s homepage, the pine forest surrounding the restaurant and the sea practically at hand’s reach make their way to the table. Wicca is more in tune with nature than most other restaurants, but this is a matter of lifestyle rather than a goal. The best way to experience it is to try the themed special menu, which changes frequently.
The current special menu, autumnal Parade of Estonian Flavours, lives up to its name. It features milk cap salad, flash pickled roe deer, potato soup with dried flounder strips, pike in cream sauce and wild berry sauce with goat’s milk foam and meadowsweet candy. The creamy potato soup with dried strips of flounder and bladderwrack stands out with its delicately silky texture and umami-rich flavour. New Estonian cuisine in the best sense. This dish has the potential for becoming the national soup as we don’t actually have one yet.
