A restaurant that takes after the chef

With thick limestone walls and a high ceiling painted white, Smak’s interior is light and bright. Chef Dmitri Rooz often brings at least one of the dishes to the table himself and willingly talks about them with the guests. The interior of the restaurant reflects the essence of the chef. This essence also has a flavour in the form of Rooz’s Sour cocktail, where tangy rhubarb and lemon juices merge tamely with gin and aquafaba into a balanced, silky drink.

Orchestrating the different flavours of ingredients in your food into a single mouth-watering taste ensemble is a particular skill of Dmitri Rooz. He has twice represented Estonia in the world’s most glamorous cooking competition and cooks world-class food. With duck liver cream, for example, he offers a solution for those who cannot give up the taste of foie gras, although for ethical reasons, prefer to not eat it. Smak is a restaurant that takes after the head chef.
