A Chef in a Farm House

The story of the Ööbiku Gastronoomiatalu (Nightingale Gastro Farm) is a story of how a professional chef bought a farm to make it his summer home. And ended up making it his workplace. And now, Ants Uustalu no longer drives out to his customers – the customers come to him. It is a good place for a conference or a larger celebration. In the summer, it is a summer restaurant, and in the winter, a winter restaurant… And Ants Uustalu lives here, too.
The final stretch of the road to the farm is an unpaved road, and cars leave it caked with dust or mud. This is a place for honest, simple country life. Even though it takes less than an hour to reach from Tallinn city centre. The Ööbiku farm does not rear its own fowl nor farm its own vegetables. Nevertheless, the raw ingredients are grown nearby. In the nature and in the other farms. But the rest remains a secret until dinner begins. The only constant is that every participant is served an identical five-course dinner. What’s on the plate is revealed as the plates are served. The Ööbiku farm serves modern Estonian countryside cuisine as interpreted by Ants Uustalu.
