How we evaluate?Enchanting water and fire
No other word than enchant can be used to describe what NCH does to its guests. Before entering the restaurant, you should take a short walk around the house. You won’t need to be reminded, the restaurant’s location invites you to explore and offers panoramic views of Tallinn and enchanting sea moods to observe. Different every day, depending on the weather.
This enchantment continues in NCH’s tiny vestibule in comfortable armchairs while enjoying an aperitif and appetisers. The sea is hypnotizing even when it is already dark outside. When the waiter guides the guests into the dining room, the open fire blazing in the back takes over the task of further enchantment. Most of the NCH dishes are prepared In this fire. Table by table, guests are invited to observe the preparation of some of these more closely. If you are here for the first time, but find that something here seems somehow familiar, then there is no reason to be surprised. The current leading chefs of a few dozen restaurants have prepared their first better dishes on the same fire following the instructions of mentor-chef Tõnis Siigur. Dishes that are history here continue to live their lives in a slightly different form in other restaurants.
NCH, however, tastes new with every new menu that Tõnis offers in cooperation with his mentees. NCH leads the way in Estonian gastronomy.
