Located in Tartu’s best hotel Lydia, restaurant Hõlm offers nuanced food. As per tradition, bread and butter are brought to the table first. This is no ordinary butter. It is plain and caramelised butter whipped together. A small but distinctive detail. Such details can be found in every dish all the way to the honey marmalade made from honey from the beehives on the hotel’s own roof.
If this restaurant were characterised by just one adjective, it would be charming. This thought comes to mind first by observing the discreet and knowledgeable service of the waiting staff, who are always on hand. Continues with a sip of wine recommended by the sommelier, which you wouldn’t have thought to pick yourself. Is visible from the appearance of the dishes and invades your nose with the aromas.
Even the way food is cooked here is charmingly discreet. Highlighting the purest flavours of the ingredients, the chef himself modestly stays in the background.
