Cookbook to go

Hõlm took over the position of the most sophisticated restaurant in Tartu immediately after its opening four years ago and has not given it up so far. Many of the restaurant’s dishes draw inspiration from the owner’s grandmother’s nearly hundred-year-old recipe booklet. To compare what the dishes were like back then and what they have developed into now, the restaurant published their own cookbook. This book is even listed in the menu, so if you really enjoy the meal, you can use the recipes to put your own spin on the dishes at home.
The original recipes have changed a fair bit in the book, but far more dramatically in the restaurant. What was fine a hundred years ago may still be palatable today, but some changes are expected. Still, nostalgic flavours are discoverable and recognisable, for example, in the pumpkin soup served immediately as a chef’s greeting, where the traditional flavour is rounded out with chilli and ginger.
The ambience of the restaurant is sophisticated and refined throughout. Offering the widest selection of champagnes in the city and fine wines by the glass, the drinks menu ties in with the elegant atmosphere.
The last hundred years have been turbulent times in Estonia, and this is reflected in the recipe book’s journey. It started with a passion for good food and desire to replicate that in home-cooked meals. Deported to Siberia along with its owner, the book managed to survive and return to Estonia. Having endured the difficult times, the book continues what was started a hundred years ago, albeit in a new and unexpected way.
