Estonians tend to sarcastically refer to Estonia as potato republic. Given the potato’s popularity in our cuisine, that name is actually quite fitting. Friikabaar (fries bar), which recently opened at Baltic Station Market, serves as an embassy for the potato republic. Offering both sweet potato and regular fries. With just sauce or loaded. With flank steak or fried chicken.
The potato republic shares a counter with bao kingdom. Those who are not interested in potatoes can indulge in a bao bun or two.
Such a unique combination has been created by the former ace of fine dining Mihkel Rand, who has brought his knowledge and skills to the world of fast food.
