In terms of food, Kuressaare had languished. The same chefs cooked the same dishes year after year with little variation. Fortunately, in the past year things have changed. It began with a game of musical chairs, in which chefs from several major restaurants changed jobs and ended with chefs from elsewhere replacing them.
Mosaiik experienced the most drastic changes. The new menu offers brand new flavours not just for the café, but for the whole island. The delicious tomatoes grown at Rautsi farm have never been cooked like head chef Ivan Derizemlja does at Mosaiik. Vegetarian dishes in other Kuressaare restaurants are unlikely to catch your eye, but they certainly do here. Grilled cauliflower with fried pearl barley and mushroom sauce is famous across town.
Despite the unusual menu, the restaurant always has an especially authentic Saaremaa atmosphere. If you haven’t been to Mosaiik recently, you certainly haven’t tasted the freshest flavours in Saaremaa!
