Turning Kopli into Copenhagen

Minimally processed and boldly combined. This is perhaps the shortest way to sum up the essence of Barbarea cuisine. This style is familiar to those who often visit various restaurants in Copenhagen. Fermentation is one of the favourite activities of Barbarea kitchen staff and there are a few other restaurants that use anywhere near as many local organic ingredients.

The location in a former industrial building only exacerbates the Copenhagen feeling. The cherry on top is a drinks menu dominated by ecological and biodynamic wines and craft beers. The kitchen staff of Barbarea aspire to a personal relationship with the ingredients and visit suppliers frequently, even lending a helping hand. Among other things they have got involved in winemaking.

The tastes offered by Barbarea change from time to time and depend on what is currently relevant for the kitchen staff. Currently, it is the addition of exotic spices to local flavours.
