Old farmhouse cuisine, where food was made from home-grown ingredients, is considered to be the predecessor of modern Estonian cuisine. It was food that was meant to nourish, not provide you with taste experiences. This is the main reason why there are so few restaurants that offer modern Estonian cuisine. This playground seems rather narrow given the contemporary opportunities and enticements.
